The Off‑Menu Circle

A private table for independent operators who believe simpler and more sustainable is also more profitable.

The actual operating systems behind ZANOOBA — and a small room of operators running their kitchens the same way. No theory. No selling. Just the work that never makes the menu.

The idea

Most restaurants fail because they do too much.

Eight years ago we opened ZANOOBA on one stubborn belief: keep it simple, keep it sustainable. Fewer dishes. Less waste. Calmer service. A team treated well enough to stay.

Everyone told us sustainability was the expensive option. Built in from day one, it turned out to be the cheapest way to run a kitchen — and the reason we came through a pandemic and kept growing.

The Off-Menu Circle is where we hand that over. Not as advice from the outside, but as the real systems, from one working operator to another.

What’s on the table

The systems we’d normally never share.

Written-down playbooks and working templates for the parts of the job that actually move the numbers. New systems added every month.

How We Waste Almost NothingSustainability

The system that keeps our bins near-empty and our food cost low — built on one simple principle, not expensive equipment.

The Way We Run Our TeamPeople

How we treat, train, and keep staff in a place where everyone else struggles to. Our real competitive advantage — with the tracker we use.

The Short-Menu SystemMenu

Why we cut the menu down and watched profit go up — and exactly how to engineer yours the same way.

Where the Money LeaksCost control

The unglamorous margin work — ordering, portioning, tracking — laid out as a repeatable routine.

The EU Food-Safety VaultCompliance

A complete, EU-ready food-safety system — manual, logs, and forms — set up for your own kitchen, in writing. The stressful part, made simple.

The room

Pull up a chair if you

  • Run an independent place — a bistro, cafe, retreat or villa kitchen
  • Treat the business as a craft, not a chain to scale
  • Want to grow without burning out your team or yourself
  • Share your own fixes as readily as you take others’

This isn’t the room if you

  • Run a chain or franchise machine
  • Only want to lurk and take
  • Came to pitch or sell to the members
  • Want theory instead of the actual work

A professional sanctuary. Troubleshooting, not pitching. Strictly no sales.
